In a small bowl, mix all the gravy ingredients and simmer for 5 minutes over slow fire until well thickened
whisk all the eggs until well blended. Add mushroom, green onion, white pepper and salt.
Gently stir in the shrimp and then bean sprouts.
Heat the oil in a fry pan on medium heat, (I used a large fry pan and cooked all 4 at the same time in the same pan). Pour in 1/4 of the mixture and fry for 4-5 minutes. Turn over and fry the other side for 2-3 minutes and then transfer out. Repeat to finish the remaining portions. Drizzle with gravy and serve.
