Massaged Raw Tuscan Kale Salad with Tomato, Red Onion and Avocado

This is a super nutrient dense, delicious and easy to make salad. For those that might have a hard time with kale...this salad will have you enjoying it more than your standard lettuce salad.

Ingredients
  

  • 1 bunch Tuscan (Lacinato) Kale cleaned, stems removes and leaves broken into 2 inch pieces
  • 2 to 3 Roma Tomatoes chopped into bite sized pieces
  • 1/4 red onion sliced thin
  • 1 Haas avocado peeled, cored and sliced into bite sized pieces
  • 1/4 cup good virgin olive oil I use California Ranch
  • 1 tsp course kosher sea salt
  • 1 tbsp fresh squeezed lemon juice
  • 1 tsp raw honey

Method
 

  1. Place prepared kale in a large bowl. Add olive oil and salt and massage in your fingers for about 5 minutes or so until tender and wilted.
  2. Once wilted add the additional ingredients and stir until well mixed
  3. Adjust taste with salt, pepper and sweetner, transfer into a serving dish and SERVE!
