Laura's Celeriac Salad

A note from Laura This is delicious ! A longer marinade time would probably be even better (I only waited an hour cause I was hungry.) Maybe an apple cider or rice vinegar marinade? You can also add grapes for a sweet touch

Ingredients
  

  • 1 medium to large celeriac peeled and thinly sliced
  • 1 lemon juiced
  • sea salt to taste
  • 1 clove garlic minced
  • 1-2 tblsp good olive oil
  • 2-4 cups assorted greens lettuce - frisee
  • 1/4 cup chopped walnuts or pecans chopped
  • 1-2 heirloom carrots sliced thin

Method
 

  1. rinse peel and slice celerIac. Place in a bowl with lemon juice, olive oil, garlic and sea salt. Marinade for 2 hours to overnight.
  2. Rinse and tear lettuce greens and place on a platter.
  3. Top with carrots and celeriac in marinade
  4. Top with chopped walnuts
