Garlic Parmesan Cauliflower Bites

While these are not the lowest in carbs, they are gluten free and oh so tasty! I like to serve mine with a great pasta sauce for dipping. Great for game day!

Ingredients
  

  • 1/2 cup grass fed unsalted butter Kerry Gold, Vital Pastures
  • 2 garlic gloves finely minced
  • 1/2 cup gluten free Italian breadcrumbs I put them in a spice grinder to make them fine
  • 3/4 to 1 cup good Parmesan cheese finely grated
  • 1/4 tsp kosher sea salt
  • 1/4 tsp black pepper
  • 1 head cauliflower

Method
 

  1. Preheat oven to 400 degrees F.
  2. Line a large baking sheet with parchment paper. Set aside.
  3. Remove all leaves from cauliflower head. Cut cauliflower into florets, all roughly the same size. You can slice the large florets in half, if needed.
  4. Melt butter and in a small bowl. Add garlic and stir in. Place breadcrumbs, salt, pepper and Parmesan cheese in another bowl. Dip each cauliflower piece into butter first, then to breadcrumbs. Place each breaded piece on prepared baking sheet. Repeat until you use up all cauliflower.
  5. Roast cauliflower for 35 to 32 minutes, or until the breading is golden brown.
