Fry up the bacon until crisp. Remove from heat and set aside to cool. allow the bacon grease to cool a little in the pan.
While bacon is cooking , prepare your frisee on a large platter and set aside.
Place the lemon juice in a medium bowl. Core and quarter pears. Then slice each quarter into three slices and add them to the lemon juice and toss. Arrange them on the frisee.
Chop the bacon into lardons and sprinkle over the pears and frisee.
Add the bacon grease to the bowl the pears were in. Add the rest of the ingredients to taste and whisk well to make a great dressing.
Salt and pepper the salad and pour the dressing over and serve.
