Daikon Asian Turmeric Chicken Soup

A bit spicy ( but you can add more) and full of top nutrient dense ingredients. What a great time to serve a healthy immune building dish.

Ingredients
  

  • 1 1 1/ lb bone in chicken breasts vegan - use tofu
  • 2 quarts chicken bone broth vegans can use a good veggie stock
  • 1 quart good water
  • 1 large carrots peeled and cut into bite sized pieces
  • 1 bunch scallions chopped white part only. Reserve the greens for later.
  • 3 cloves garlic minced
  • 1 tsp ground coriander
  • 2 tbsp fresh ginger grated
  • 2 tbsp tubed lemon grass or one stalk smashed
  • 1 tsp turmeric I used fresh grated
  • 1 tsp fish sauce
  • 1 tbsp soy sauce or Tamari
  • salt and pepper to taste
  • 1 cup greens of choice I used Spinach
  • 1 cup daikon spiralized
  • 1 cup bean sprouts
  • 1 tsp pepper flakes optional

Method
 

  1. Place chicken breast in a pot and cover with water. Bring to a boil and skim off the fat. Allow to cook for about 30 minutes until completely cooked. Remove from the pot and set aside in a bowl.
  2. While the chicken is cooking,in a small saute pan, saute the carrot and scallion whites and ginger until tender(about 4 minutes). Add garlic and saute for another 30 seconds until fragrant. Set aside.
  3. Once the chicken has been removed from the pot, add the bone broth, the coriander, the ginger, the lemongrass, the turmeric, the fish sauce and the soy sauce. Add salt and pepper to taste. Add the sauteed onion, carrot, ginger and garlic mixture to the broth. Allow to simmer for 15 minutes.
  4. Remove the chicken meant from the bone, break into pieces and drop into the broth. Allow to simmer for about 15 minutes more. Add daikon noodles and simmer for 5 minutes.
  5. add spinach and bean sprouts and cook until spinach is bright green and sprouts are still crunchy (about 3 minutes.
  6. Spoon into serving bowls and add optional Sriracha sauce or pepper flakes, fresh cilantro and serve.
