Frisee Salad with Pears and Lardons and Dijon Vinigrette

This is a super delicious salad. If you want to make it extra special, you can add goat cheese, or poached eggs. Your guests will rave over this one.

Ingredients
  

  • 1 to 2 heads frisee washed and largely torn for basic salad
  • 2 to 4 pears cored and sliced
  • 1 tbsp fresh lemon juice
  • 6 slices pastured thick cut bacon
  • 2 tbsp cider vinegar
  • 3 tbsp wine vinegar
  • 1 - 2 tsp dijon mustard
  • 2 tbsp shallot minced
  • 1 to 2 tbsp sweetener I use xylitol or honey

Method
 

  1. Fry up the bacon until crisp. Remove from heat and set aside to cool. allow the bacon grease to cool a little in the pan.
  2. While bacon is cooking , prepare your frisee on a large platter and set aside.
  3. Place the lemon juice in a medium bowl. Core and quarter pears. Then slice each quarter into three slices and add them to the lemon juice and toss. Arrange them on the frisee.
  4. Chop the bacon into lardons and sprinkle over the pears and frisee.
  5. Add the bacon grease to the bowl the pears were in. Add the rest of the ingredients to taste and whisk well to make a great dressing.
  6. Salt and pepper the salad and pour the dressing over and serve.
