This tart can be made with any kind of cheese.  I once had a friend who came to dinner and brought me a big beautiful ball of 5 pounds of smoked edam.  I had to figure out something to do with it and came up with this recipe.  It satisfies a pizza crave too. I have made this recipe many, many times, and it is always a big hit.

This recipe uses one Paleo Pie Crust. I used this pie crust recipe: Best Paleo Pie Crust

If you are on a strict keto way of eating, you can use a coconut flour pie crust  http://thecoconutmama.com/coconut-flour-pie-crust, or any nut crust.  These are a little harder to work with but can be pressed into tart pan and delicious.

Zucchini Tomato Tart

Prep Time 30 minutes
Cook Time 35 minutes
Total Time 1 hour 5 minutes
Servings: 8 Depending on Size
Course: Apppetizer, Main Dish

Ingredients
  

  • 1 Pie Crust See link to pie crust recipe
  • 2 tsp. Jarred Garlic Do not use fresh garlic for this recipe, as it is too strong
  • 1 medium Zucchini Slice into thin rounds (I use a mandolin)
  • 3/4 cup Smoked Gouda Grated (can sub any cheese you like)
  • 2 Roma Tomatoes Slice into thin rounds
  • 1 Tbs. fresh basil Roughly chopped
  • salt & pepper To Taste

Method
 

  1. Preheat oven to 375
  2. Rub garlic onto tart crust
  3. Gently lay zucchini slices in a circular pattern to cover bottom of crust.
  4. Place grated cheese over top of zucchini
  5. Place tomatoes in a circular pattern over cheese.
  6. Sprinkle with fresh basil, and salt and pepper to taste.
  7. Bake for about 35 minutes until crust is golden and cheese is melted.
  8. Slice and Enjoy!
