Roasted Cabbage

This is super easy, super healthy and can easily be enhanced. Last night I added 1/2 cup marinara sauce, 1/4 cup xylitol and 4 tbsp white vinegar in a small saucepan. I cooked until dissolved. Allowed to cool while cabbage was roasting and then poured it over the cooked cabbage to make sweet and sour.

Ingredients
  

  • 1 large head organic cabbage I used green, but you can use savoy, nappa or any cabbage
  • Good olive oil I used California Ranch Chefs Blend
  • Kesher Sea Salt and Pepper to taste

Method
 

  1. Preheat oven to 400 degrees
  2. Place the cabbage stem side down and slice into steaks about 1/2 inch thick. Lay in a single layer on a cookie sheet. Brush generously with olive oil and salt and pepper. Turn and do the same on the other side.
  3. Roast in 400 degree oven for about 40 minutes. Don't worry if you see some dark burnt crispy ends...that is what makes it so good.
  4. Remove from oven and chop into more edible size pieces and serve.
