
Roasted Cabbage
This is super easy, super healthy and can easily be enhanced.
Last night I added 1/2 cup marinara sauce, 1/4 cup xylitol and 4 tbsp white vinegar in a small saucepan. I cooked until dissolved. Allowed to cool while cabbage was roasting and then poured it over the cooked cabbage to make sweet and sour.

- Preheat oven to 400 degrees
- Place the cabbage stem side down and slice into steaks about 1/2 inch thick. Lay in a single layer on a cookie sheet. Brush generously with olive oil and salt and pepper. Turn and do the same on the other side.
- Roast in 400 degree oven for about 40 minutes. Don't worry if you see some dark burnt crispy ends...that is what makes it so good.
- Remove from oven and chop into more edible size pieces and serve.
