Pistachio Shortbread Cookies

Course: Dessert

Ingredients
  

  • 6 Tbsp Butter I used grass fed melted
  • 2 cups superfine almond flour
  • 1/2 Cup Confectioners sweetener of choice ( I used xylitol but allulose works great too of course you can always use superfine sugar)
  • 1/2 cup chopped pistachios
  • 1 tsp vanilla extract
  • A few drops of green food coloring for St Patricks day

Method
 

  1. Add all the cookie dough ingredients in a medium bowl and mix until well combined.
  2. Form into a long roll and wrap tightly with plastic wrap.
  3. Chill for at least 30 minutes
  4. Unwrap and slice into rounds
  5. Bake at 350 F for 24 minutes until golden brown at the edges.
