Roasted Red Pepper Chicken 2

CREAMY ROASTED PARMESAN RED PEPPER CHICKEN

This rich roasted red pepper Parmesan chicken tastes like something from your favorite Italian restaurant—but it's surprisingly easy to make at home! I wanted a dish that would use my red peppers. This was truly amazing. I served it with zoodles and salad, but pasta would also do.

Ingredients
  

INGREDIENTS
  • 6 Chicken Thighs I used Pastured Breasts
  • 2 tbsp Olive Oil
  • 1 tsp Smoked Paprika
  • 4..1 tsp Garlic Powder
  • Salt and pepper To taste
  • 3 cloves Garlic minced
  • 1 Roasted Red Pepper (I roasted mine over flame and peeled) sliced
  • 1 cup Roasted Red Pepper Puree You can buy a jar or roast your pwn
  • 1 cup Heavy Cream
  • ½ cup Chicken Broth
  • ¾ cup Grated Parmesan Cheese
  • 2 tbsp Butter
  • Fresh Parsley Garnish

Method
 

INSTRUCTIONS
  1. Season the chicken with paprika, garlic powder, salt, and pepper.
  2. Sear until golden and remove from the skillet.
  3. Melt butter and cook the garlic.
  4. Add roasted pepper puree and chicken broth.
  5. Stir in the heavy cream and Parmesan.
  6. Simmer until the sauce thickens.
  7. Return the chicken to the skillet.
  8. Add sliced roasted peppers.
  9. Cook until the chicken is tender and coated in the creamy sauce.
  10. Garnish with parsley and serve over pasta or mashed potatoes.
