Chocolate Peanut Butter Loaf Cake

A tender and delicious loaf cake. But healthy and gluten free, low carb.

Ingredients
  

  • 1/2 cup no sugar peanut butter
  • 4 tbsp grass fed butter(divided) I used Kerrygold
  • 1/2 cup good full fat coconut milk
  • 3/4 cup almond flour
  • 1 tsp good vanilla extract
  • 3/4 cup zylitol
  • 2 tsp baking pwder
  • 1/2 tsp kosher salt
  • 6 eggs slightly beaten
  • 2 oz Lilly's Chocoloate Chips

Method
 

  1. Preheat oven to 350
  2. Butter a standard loaf pan. Place parchment in the buttered pan letting it hang about 3 inches over the long sides. Butter the parchment and set aside.
  3. Melt 3 tbsp of the butter with the peanut butter (i used a microwave).
  4. Stir in the remaining ingredients except for the eggs
  5. Tase the batter to see if it is sweet enough...adjust if needed.
  6. Pour in the eggs and stir well. Pour into prepared pan.
  7. Pour into parchment lined loaf pan.
  8. Bake for 45 minutes until browned and toothpick comes out clean.

Notes

I served this with apple butter.  Homemade applesauce or a good sugar free jam.
