When following a keto way of life, it can be difficult to come up with amazing, healthy and delicious desserts. I have this challenge every two weeks when I cook for the Joy of Organics community. Most of the time I hit the nail on the head, and other times the dessert leaves something to be desired. This is one of my go-to desserts because it looks beautiful, tastes great and most importantly, is healthy.

Cheesecake Stuffed Strawberries

Course: Dessert

Ingredients
  

  • 2 pints strawberries
  • 1 cup grass fed raw heay whipping cream
  • 1/3 cup xylitol
  • 1 tsp vanilla
  • 2 tbsp almond flour
  • 1 tsp xylitol for garnish

Method
 

  1. Core strawberries and cut a small piece from the bottom so they will stand. Place the strawberries neatly on a serving plate and set the bottoms aside.
  2. Puree strawberry bottoms into a paste using a food processor or blender.
  3. Place the whipping cream into a stand mixer and whip on high until stiff peaks form.
  4. Add xylitol and mix for 30 seconds.
  5. Add vanilla and strawberry paste and mix until well blended.
  6. Place mixture into a plastic ziplock bag. Cut off a tiny corner and pipe the filling into the cored strawberries.
  7. Mix the almond flour, xylitol and cinnamon, then sprinkle the mixture on top of the strawberries.
