Let’s face it – there is no substitute for a good wood-fired pizza made with imported Italian 00 flour. But if you are grain-free, there is no reason to deprive yourself when it’s this easy, and this good to make cauliflower pizza at home. Enjoy!

PRO-TIP:

1) Use a pizza stone – they are inexpensive. Otherwise your pizza will be soggy.

2 )Make an extra crust, and place it in the freezer (un-baked) for when the urge strikes.

Cauliflower Pizza

This recipe makes 2 pizzas

Ingredients
  

  • 4 cups riced cauliflower about 1 head
  • 4 pastured eggs
  • 2 cups mozzarella cheese I used a grass fed mozzarella
  • 3 tsp dried oregano
  • 4 cloves garlic minced
  • 4 tablespoons coconut flour
  • salt and pepper to taste
  • toppings of choice

Method
 

  1. Preheat oven to 425 degrees F.
  2. Prepare 2 pizza stones per directions (I soak them first, and then place in cold oven while it preheats.)
  3. Make sure your cauliflower is roughly chopped in florets. (I do not use stems) Add the florets to your food processor and pulse until cauliflower resembles rice.
  4. Place the riced cauliflower in a microwavable container and cover with lid. Microwave for 10 minutes.
  5. Place the microwaved cauliflower in a large bowl and add the 4 eggs, 2 cups of mozzarella,oregano, garlic, coconut flour and salt and pepper.
  6. Mix everything together.
  7. Separate the mixture in half and place each half onto parchment paper and shape into pizza crusts.
  8. Slide the parchment paper onto the hot pizza stone.
  9. Bake the crust (no topping yet) for about 25 minutes or until nice and golden. Don't be afraid the crust is not soggy at all.
  10. Once golden, cover with sauce and cheese and/or toppings of choice.
  11. Place back in the oven for another 5 to 10 minutes or until cheese has melted.
  12. Slice and serve.

Notes

If you do not have a microwave, I’d recommend to steam the cauliflower first, and then rice it.
